The mother of the love of my life...

Linda Jackson, Happy birthday, We have had our ups and our downs, but I love you unconditionally. I know I can always count on you to Mother me when I need guidance in my life. Thank you for always being there for us. I have always been told "A man will always treat you the way he treats his mother" and I will forever be thankful of the bond that you have created with your son that makes him treat me like a princess. We love you and would be completely lost with out you and your loving ways in our life. We hope that you had the best birthday. Here is to many many more birthdays!

I have loved you for a thousand years....

Time passes so slowly, but yet so fast. We have been together for over 2 1/2 years, but most days it feels like 20 years. I cannot believe I have found someone who is so perfectly imperfect. I have always loved the quote "We come to love not by finding the perfect person, but by learning to see an imperfect person perfectly." and that is what I feel I have found in you, Zach Jackson. You stole my heart long ago as a girl and we needed our experience with others before we could be each others forever. I know I don't say it enough but Thank you.. For everything you do. You may not see it, but I cherish every part of our life together. I love picking on you, I love having my best friend with me every day, I love laughing with you, or when we both get crazy and make fun of each other, I love that you support me in everything I say or do even if it sounds crazy, I love that you love my family like you've known them your whole life, I love that one of your best friends is my Dad.  I just simply love our life together. I never thought I could feel this way about someone until I started this crazy adventure with you. You make me the woman I want to be every day and you support me like no one ever has (except my parents of course). Basically I could never imagine my life a day without you in it. I honestly think I am the luckiest woman in the world. Thank you for being the best thing that has ever happened to me. The song A Thousand Years by Christina Perri explains my love for you.. It's not goodbye, just see ya later..

Today is the day I say goodbye to my great grandma, a beautifully strong amazing woman. A woman who has given me the courage to know life isn't easy but it sure as hell is worth it. As my heart breaks standing by her bed saying not goodbye but I will see you later. As I reached down to hold her frail hand in mine I was hoping she would look up at me and say "I love you more." like she always would when I would leave her house. Like I've posted before, us Becks do NOT like goodbyes, that's why I told her I will see ya later. Soon she will be gone physically but will forever be with me spiritually guiding me through my life.. I knew this moment would come just wish it wasnt this soon.. For me this is the second "goodbye" I have said in one week. All I can say is God is good, I hurt right now but I willl not shatter because these two beautiful women I have lost this week would beat me silly. Or as my grandma used to say she would manock me! Yes she was a feisty one, and always put up a good fight.. Till we meet again Grandma, I'll be thinking of you and using all the dirty Spanish words you taught us, I love you. Rest in peace.

He Loved Me First....

Father's day is right around the corner and I just wanted to take a moment to thank my Daddy for being the best Dad in the world. Dad, You never missed a moment of my life and I am incredibly lucky to have such an amazing man as my father. I don't remember a softball game, ballet recital, school play, golf tournament, etc, that you have missed out on. Thank you for ALWAYS being my biggest cheerleader, for being my rock when I am scared or lost in my crazy journey of life. You are the ONE and ONLY man I know I can count on day or night now matter where you are or where you will be you will always be there for me in a blink of an eye. Thank you for pushing me through life and through life lessons that I needed to learn, for being there even when you don't think I am doing the right thing, for supporting me always. I don't know where I would be or what I would do without such an awesome Dad like you. Even though I am "growing up" I will always be your little girl and there will never come a day that I won't need my Daddy anymore. I love you and cherish the building of our friendship with the older I get. Happy Fathers Day.

Its A Nice Day For A White Wedding...

This last weekend one of our really close family friends got married! And oh my gosh what a BEAUTIFUL wedding it was and there was so much love and joy! I have known Jordan since I was eight and I have known Brandon since I was thirteen and they are beyond the perfect match for each other! I wish them all the happiness and love in the world! All together it was such a gorgeous day and the wedding was perfect.  My mom was in the wedding as a bridesmaid, here are some pictures of this special day!












A Childhood Best Friend...

So this happened a while ago but I just never got around to writing it, about a month ago we had to put my dog down. I got her for my fourth birthday, so that would make her about 17 years old! She was my best friend when I was little, became a companion as I grew up. Although she lived with my parents and she LOVED my Dad, she was mine. It was a really EXTREMELY hard decision to put her down, but now we know she is okay in a better place. Going to miss my Sadie girl! I love you!

Mommy's Day

I just wanted to take a minute to thank some Mommys in my life.

Mom. Thank you for being there for me during any period in my life. I am thankful to have had such an understanding loving Mom. You have taught me so much in life and you have believed in me like no one ever has. You have taught me to be tough even when its hard, stand my ground and to never give up. we have definitely had our moments but what mother daughter doesn't. I love you and I could have never asked for a better Mother.

Meghan Elaine. Thank you for not trying to be a Mom to me but approaching me as a friend... I mean we are so close in age ;). But in all seriousness, you have been such a great "friend" to me and been there for me when ever I have needed someone to talk to. And you are the best Mom to Max and Ella. I love you!

Linda Jackson. I really appreciate the man you have made. If it weren't for you I know Zach would not be half the man he is. I know the reason he treats me so good and loves me so much is because of the way he was raised by you and I am blessed to have your family in my life. Thank you, love you.

Cooking with ME!

Okay so everyone knows I love to bake.. and craft and cook... So I am going to start blogging a few of my favorite recipes! So here it is my first post, not because it is my favorite (although it is soooo yummy), just because its what I am making as an app for dinner! I took pictures to help with a visual.. I like visual things.

Jalapeno poppers: first brought to my liking from Zach's step dad Dion, he passed the recipe down to us and now we make them..

You will need:
-2 Pounds Jalapenos
-1 Cup milk
-1 Tube Jimmy Dean sausage
-1 Block Cream cheese
-1 Pound bacon.. (I like to use good bacon from the butcher block at the store)

Step 1: Cut the tops off the Jalapenos

Step 2: Gut out the jalapenos. I have a special tool but you could use a knife and a skinny spoon, which ever you perfer. IMPORTANT: Make sure to get ALL seeds out of the jalapenos, the seeds are what make them super spicy. 

Step 3: This step is if you dont want them as spicy. I fill up my sink with cold water, then a cup of milk to help cure the spice, I let them sit about a half hour. 

Step 4: Cook the sausage in a pan on the stove top. I like to make sure there is no pink anywhere by the time I am done cooking, although you will bake them at the end I just am a freak about raw meat! Preheat oven to 415 degrees.

Step 5: Put your cream cheese in a large bowl and put in the microwave for about 30 to 40 seconds to get it soft. 

Step 6: Combine the cream cheese and the sausage in the bowl and mix well.
Step 7: Cut the bacon strips in half.

Step 8: Stuff the jalapenos with the mixture and then wrap the bacon, and skew it with a tooth pick. Put onto tray, I have one specially for jalapenos but its not necessary. 

Step 9: Bake for about 30 minutes, I would check on them, depends on what bacon you buy. Once the bacon is cooked they are done! Enjoy!







Uhhh Oh...

So I epically failed at my 30 day shred! But I restarted May 1st. I figured new month new workout plan... So I will update a little.. I have lost 6lbs. The scale says 8 but I flex in weight daily one or two pounds so I am going to say a solid 6lbs I have lost! The video is getting A LOT easier! About to start the second level of it on the 10th! I will update more later!

Sore no more

So it's day 7. The work outs are getting easier and go by a lot faster. In 3 days I will be starting my second level. And possibly measuring myself. :/ I haven't really been sticking with a good diet. My sisters bridal shower was last weekend as well as zach's birthday. Lots of eating! We will see!!

Day 3, your killin me!!

This morning I was so sore I did not want to move!! Mostly my upper legs from all the squats! But man I am hurting. They do say if you aren't sore the next day then you werent working out right. So I am glad that my muscles are responding! Hopefully I can make it through my shift! Eek! Happy Friday all!

Day 1, really? I have to work out?

Okay so like I said I am starting Jillian Michaels 30 day shred today. I can't find my disc, so I'm going to go to target when I get off to buy a new one. I am the biggest I have ever been in my life and I'm only 21! This personally is not okay! I am in the prime years that I should be fit! So here are my measurements;
Waist: 30"
Hips:37"
Bust:37"
Right arm:13"
Left arm:13"
Right leg:23"

Weight: 156lbs

My goal;
Waist: 25"
Hips:27"
Bust:34"

This goal is probably not going to happen with just the 30 day shred, I'm sure it will take much more time to see my goal but hey, I just hope to see some results! I hope that after the 30 day shred I can start a hybrid workout with shred and p90x. I will keep you updated as much as possible. It helps me to remember what I see and what is working :) happy summer training all!!

30 days of death

Tomorrow I am going to start Jillian Michaels 30 day shred. Eek! I hate working out! All I can say is I hope that God gives me the will power to give up 40 minutes every day to do my least favorite thing in the world! It will be worth it. I am going to weigh in and measure myself tomorrow. I will post my start and my progress at every level (1,2,3) but no pictures until day 15 ( half way through the program) to see how I have changed since day 1. Wish me luck! I need it ;)

Zach's Birthday

On sunday Zach will be turning 23! I love birthdays so I am excited but he says that now he is just getting old. HA. I paid for him to go skydiving for his birthday. He went this last weekend and LOVED it. I am happy that he had a good time and enjoyed his birthday present. It was quite a bit of money to pay for that 5 minute jump and I want him to be able to open something on his birthday that can stay with in my budget, I have a few ideas up my sleeve. Pray for her.

My step Mom Meghan has got me to start following a blog called prayfordaisy.com A little girl who is 7 years old and has been diagnosed with cancer. Tragedy, a beautiful little girl battling cancer for now, the 3rd time. No 7 year old should have to battle so hard to live, she goes in for surgery today. Pray for her and her family. Pray that God has a beautiful plan for this amazing little girl, just like he did for my friend Clayton. Here is Clayton's story, cancer is powerful, but God is more powerful. Love to all my readers.

3,025 miles. 48.2 hours. 12 states.

As of a couple days ago my brother (Michael) has accepted a job in New York. This is a big change for our family. Neither Michael nor I have ever lived more then 4 hours away from our parents or each other. For me I think fear, tears, alone, 8,391,881 people, but this is where my brother and I differ. He thinks happiness, change, opportunities, joy, adventure, smiles, 8,391,881 people who I could help change their lives. My brother has been working with the LGBT non profits since he was 17, a couple years ago took the lead position of GALA San Luis Obispo, being their youngest president in the history of San Luis's GALA. For the past 3 years he has done the AIDS life cycle, which is 7 days of bicycling from San Francisco to Los Angels. In September of 2011 he became a full time working coordinator for ALC and loved it. Now, in a month he will be taking on a 7 month position in New York, as a Ride Manager. I would like to take a moment and say I am so proud to call him my brother. I am lucky to have had someone in my life to teach me from the moment I was born to "Never try to fit in, because you were born to stand out!" He has taught me to fight for what I believe in even if other people think its a joke, never let someone tell you that you cant because you can do what ever you set your mind to. When everyone is saying you cant, prove to them you can. Although I don't see my brother every day, or every week I will miss that I can't just hop in my car and be there in a couple hours. I am so proud of you Michael Beck and so incredibly thankful that God has blessed me to have such an amazing man in my life. I love you so much and I hope you enjoy the next chapter in your life, you deserve it.

Gettin' Dirtayyyy!

So I am posting two blogs tonight. I haven't had time to since I have been training for my new job, but I wanted to post about my anniversary trip and how AWESOME my mother is! While we were in Monterey, my Mom and her friends did a mud run(which consists of climbing five foot walls, diving into mud puddles, doing push ups, crawling in the mud, etc..). And for those of you who don't know my mom, she DOES NOT like running or dirt. She made it all 5 MILES! She did a great job and didn't even look winded at the end! I am very proud that she finished in under an hour and half. I know I would have been crawling across the finish line, Im sure that beer at mile 3 helped give a push though ;) Proud of you Mama! I love you!



They were so happy to be done!

A little early anniversary love.

The 22nd is Mine and Zach's anniversary. We will be spending one night at the beautiful Cambria Pines Lodge, and then we will head up the coast and spend two nights in Monterey and adventure around there. I am so excited, we both really need this little get a way! In perfect timing before I start my new job!
